IE mode risks

We are considering recommending IE mode to temporarily solve some issues until we can refactor some web apps for our customers.  

Questions:

1) Why did Microsoft remove configuring this via flags or menu option? 

2) What risks are there is IE mode beyond compatibility (security?)

You can specify sites that needs IE mode, be it internal or external. If you already use them with IE, so risk stays the same with these sites. However all other sites will be opened with chromium. I think that has less risk than browsing whole internet with IE.
