Use Calibre E-book manager (free) to read your EPUB files
Details about OneNote were discussed extensively at Ignite 2019. Look for the session discussing the future of OneNote, it was interesting and a big relief if you are a heavy OneNote (desktop/win32) user.
As for the legacy Edge reader, I'd encourage any previous users to keep voting to make the Edge dev team aware that there's interest in this feature. If they are made aware, there's a good chance it will be brought back.

There is no need to develop something that is already developed better by others.

Microsoft Edge will no longer support e-books that use the .epub file extension after September 2019.
