How do you configure the new 'My App' experience for enterprise apps registered in Azure AD?

I've enabled the new experience for My Apps panel and it's now showing some, but not all, of our enterprise apps as 'Pre-Production'

I can't find anywhere where this classification is set or how to unset it! Any ideas?
