Does Azure VDI track/record microphone activity even when not actively in a meeting?

Our contractor has required our team to utilize VDI for a project. My staff are concerned the application records microphone activity even when they are not actively in a meeting through VDI. I.e. if they are doing work for another project or having a personal conversation. If not, is there a link I can provide them with that illustrates this?
