We are currently comparing W365 with VMWare Horizon for Azure. Appreciate they overlap - is there a MS doc detailing the pros/cons of both and which you would use in what scenario please?

No, although there is a link in the presentation to request trial licenses for Windows 365 to evaluate the product.
