We have an article here Help prevent sharing via Microsoft Edge for Business to unmanaged AI apps from managed devices | Microsoft Learn that describes using Purview DLP to prevent unintended sharing of sensitive information to unmanaged AI apps. There are additional options to use Web Filtering to block AI websites, and block applications with App Protection Policies or AppLocker.
