1. I tried the Sprint template but where do you add more sprints and the sprint interval? I feel stupid not finding it 🙂
2. When creating a Premium Plan I cant add it to a Teams channel via the Planner Tab. Is this a bug or in the backlog?

To edit sprints you'd need to be in the context of the project, your screenshot just shows a task. Open the plan from My Plans, go to the board view and group by sprints.
For the issue adding a plan as a tab I'd suggest opening s support ticket. It isn't obvious from the screenshot and description what isn't working for you.
