I can see that the new planner is enabled in our tenant and I do have the new Teams, but I still do not see tasks from a plan/project under "Assigned to me"?? Any suggestions?

Patience is all I can suggest for now Sam, that part is rolling out and you should see those tasks soon (assuming they are from the default environment).
