From what I've read so far, I don't want to roll out "New Teams" to my organisation - it would cripple us! How can we stop it?

New Teams is not that bad. https://learn.microsoft.com/en-us/microsoftteams/new-teams-known-issues You need to have the Teams Update Policy setup so new Teams it not an option to your users. This is done via Teams admin centre or PowerShell.
