Thanks, Arnab. I do not see a way to block Apple mail or Apple calendar, though. Are these in the MEM roadmap soon, for fully managed corporate devices?

Apple only allows blocking account settings modification in the Settings app. So, the "block modification of account settings" would block any type of setting accessible from the Settings app including Mail, Calendar and other apps. I don't believe there is a way to selectively block Mail or Calendar apps. However, you can use Conditional Access to require a specific app such as Outlook for mail access.
