In MEM for mobile, what are options to disable Apple mail, calendar and SIRI when iOS devices are fully enrolled in Intune? We want employees to just use Outlook for mobile and other Microsoft mobile apps in fully enrolled devices.

You can "block Siri" and "block modification of account settings" using iOS/iPadOS configuration profiles. Apple only allows blocking account settings modification in the Settings app. So, the "block modification of account settings" would block any type of setting accessible from the Settings app including Mail, Calendar and other apps. I don't believe there is a way to selectively block Mail or Calendar apps. However, you can use Conditional Access to require a specific app such as Outlook for mail access.
