is there a way to 'block all untrusted apps' and then do bulk exceptions to allow other apps?
Ideally I'd like a UI or dashboard that informs me of the amount of risk Microsoft thinks an app has and then a method to bulk allow exceptions.

Very interesting session. Thank you! Defender for Endpoint interpretation and actions are things I'm looking into at the moment. It can be very overwhelming especially trying to get to know what most definitely will have impact on the end user.
