Regarding licensing, as an enterprise customer, we've been checking the SKU availability in our portal since 11/1, but have not seen anything specific to "M365 Copilot" only Sales Copilot... is there anything we need to do or toggle to make this available?

Microsoft 365 Copilot is not on the public pricelist, you would need to get in touch with your Microsoft account team to help with that.
