Will copilot be able to reference other sheets when I am working within a particular sheet? example: If I have an excel list of target companies for marketing, and I want copilot to easily cross check against a list of current customers that we should exclude from marketing efforts, could it do that in the same way that an excel formula can reference a different sheet either stored locally or within the same sharepoint instance?

I think they all make really good use cases for Copilot and the team's are tirelessly working towards adding more skills to Copilot and its capabilities will continue to improve over time. Specifically looking toward the GA, I'd recommend referring to the announcement blog (https://www.microsoft.com/en-us/microsoft-365/blog/2023/09/21/announcing-microsoft-365-copilot-general-availability-and-microsoft-365-chat/) for what Copilot in each app can do.
