From the tests I did with the Power platform, is the [Microsoft 365 Copilot] only available for the US or US region (preview). If yes, when Copilot will be available for other regions like Canada or Japan.

Hi Dany, Microsoft 365 Copilot at GA will be available to all WW customers using our WW/Enterprise product that meet the pre-requisites listed on our blog here: https://techcommunity.microsoft.com/t5/microsoft-365-copilot/how-to-prepare-for-microsoft-365-copilot/ba-p/3851566

Is the Admin Center we will have a way to turn off Copilot in the Power platform when GA will be available for each environment?
