I have another question regarding Copilot Studio. Is it possible to create a chatbot, let’s say, for introducing new employees to what the company does? Can data for that chatbot be uploaded from Word documents and PDF files directly from SPO?

Yes it's possible to design a copilot through Copilot Studio to reason over a specific data set, including a specific SharePoint site. Here's more documentation on Copilot Studio.
