What I'd like to do is to automatically transcript every Teams meeting rather than me manually triggering it.

    I'll actually cover this in a moment. In the Microsoft Teams admin center under Meeting policies > [Choose Policy] > Recording and Transcription, you'll find two settings for Transcription and Copilot that you can configure to automatically transcribe.
