Microsoft Copilot for M365 inherits sensitivity labels of the content. It also respects permissions you have in place - so it will not provide access to content that the user doesn't already have access to. We have multiple resources for using Copilot securely that I will link below. All prompts and responses with Copilot are logged in an audit log.
