When we remote wipe the email on a mobile device, does it only erase the content related to the office365 email account? Or erase the content on the entire mobile device? Thanks!

The answer to your question is really dependent on how you enrolled and the options you selected when you wipe the device. If you are enrolled with Intune the wipe options and outcomes of those options are listed here https://docs.microsoft.com/en-us/mem/intune/remote-actions/devices-wipe If you clarify how your devices are enrolled we can provide a better answer or redirect to the right team.
