I went through the same search a while back. Used 7-Zip for years, then other tools which everyone recommends for a bit but the container setup got old fast for files I open often.
Ended up on EncryptPro for regular files, mostly because right-click encrypt and double-click open is the whole workflow, no mounting anything.
Also worth thinking about: if you ever need to send one of these files to someone, a password-protected zip means the password travels separately and now that's your whole security. EncryptPro does key pairs instead so nothing needs a password attached when you send it.
Free version's not time-limited so worth just testing on a real file.
