Yehh i am facing the same issue
My laptop is 2yrs old and I am not able to upgrade to windows 11
Model Dell Inspiron 15 7559
Processor - Intel core i7- 6700HQ CPU @ 2.60GHz

    Hope this helps I now have 11 running on the Intel 6700HQ

    So I'm not sure if it works using update assistant however I downloaded the media creation tool from here https://www.microsoft.com/en-us/software-download/windows11

    Then after creating a USB install drive I did a clean install! So far all working well still working in the last of the drivers!

    Good luck everyone that is just below minimum "recommended" specs

      Tried this, and still got an error message that the Intel 6700HQ is not on the supported processor list.

        It has to be a clean install from a media source like a USB install disk. I'd you try to run it as an upgrade it will fail. So after you create the install disk you will have to boot the computer from the disk you created with the "media creation tool". It should walk you through the rest of the install. You will likely have to download a few drivers as windows update misses some critical ones from time to time. If you have never done this I would recommend searching and learning how to install or reinstall a windows os on UEFI bios " most likely the bios type you have". Or asking someone you you know who has this knowledge! Not a good step for someone with no experience.

      I have an HP Omen which uses the Intel(R) Core(TM) i7-6700HQ CPU @ 2.60GHz 2.59 GHz.  

       

      If you upgrade outside of WIN Update-did it / does it honor your license?

        100% activated as soon as I looked before even running the updates. Automatic updates seem to be working without any issues. At this time I have been using for probably over a month and no issues! Good luck whatever you decide. In my opinion it's worth the hassle of backing everything up and installing 11!
