Uninstalling or removing the taskbar overflow menu is generally not possible because it is a built-in feature of Windows 10 and Windows 11 that manages extra icons when the taskbar is full. However, if you want to customize or hide the overflow menu or reduce the number of icons that appear there, you can do so by adjusting your taskbar settings.

If you're comfortable with more advanced methods, such as editing Registry or using third-party tools to customize the taskbar, those can sometimes remove or hide certain features, but they come with risks and may affect system stability.
As per your screenshot, I assume you want to hide build information Desktop watermark.
Try these steps:
Open Registry Editor using regedit command.
You can go to following registry location:
HKEY_CURRENT_USER\Control Panel\Desktop
In the right pane, set PaintDesktopVersion to 0.
Let us know if this helps!
P.S. If you're new to registry, create System Restore point before above steps.
