How to restore the old Start Menu on Windows 11

The new Windows 11 Start Menu is awful. How can I revert it? I also want to remove the automatically added folders.

In the Start Menu, simply click on View and select List.

No such option exists. And it is still enormously worse than the Windows XP Start menu.
