How to restore the old Start Menu on Windows 11

The new Windows 11 Start Menu is awful. How can I revert it? I also want to remove the automatically added folders.

In the Start Menu, simply click on View and select List.

Still looks like crap. I want my start menu minimalistic, small and customizable, not looking like an unfolded toilet paper.
