How to Remove These Annoying Category Folders in the Windows 11 Start Menu?

My work computer's start menu switched to this layout following the most recent update.
Changing the view to List works for maybe five minutes, after which it forcibly reverts to Category.
Having the same issue. Seems related to settings in the "Startmenu and Taskbar" GPO section. Deactivating every setting in there seems to have helped and stops the start menu from reverting to the Category view. Further testing is still necessary though.
