How do I have Win11 File Explorer sort automatically when a new file is added?

Click on the "Sort by" option at the top of the File Explorer window (it shows as "Sort" with a dropdown arrow). You can choose to sort by Name, Date Modified, Type, Size, etc. Alternatively, right-click inside the folder, navigate to Sort by, and select your preferred sorting method.
