How can i stop Microsoft Defender from scanning my computer automatically?
I prefer to do this manually rather than have Microsoft Defender do it automatically.

Just disable the scan notifications and let the anti virus do it’s job in the background without bothering you.
You can turn this off by turning off real-time protection, you can find this setting in windows security > Virus & Threat protections setting > Manage Settings.
Will it be rolled back after restart?
You can turn it off by (Turning Off Real-Time Protection, and Disable Scheduled Scans from Task Scheduler)
However, disabling these features can leave your system unprotected and your device security may be at risk. I would never recommend do it.
