Converting pdfs with complex tables layouts can be difficult especially on Mac Many built  in tools only extract text and lose formatting 
One simple option is to try an online converter that focuses on keeping the layout for example you can use Pdf to word converter from ilovepdf2 which helps turn pdf files into editable word document while keeping tables images and structure as close as possible 
It can also save time when you have multiple files to convert and need quick way to edit them in word
