Dual boot W10 with a second W10?

A friend was given a computer that's running Windows 10 Enterprise N.
The system runs but not 100%. One problem is that System Restore is damaged, so I can't back it up.
But there are numerous other little glitches so I plan to set up a fresh W10 Professional running alongside Enterprise.
Once the new version is complete with her files, emails, docs and games transferred, I'll delete Enterprise.

Her system drive is a 250GB SSD, but there's not a lot of space for the additional system so I've added a PCIe card with a new, empty 500GB SSD, on which I'll install W10 Pro.

It's a while since I've done anything as complicated as a dual-boot so I'm a little rusty. Any advice would be much appreciated.

    To remove the old OS, simply disconnect the SSD and then boot into Windows 10 Pro. Use Disk Management to delete the old system partition if desired.

    Make a new partition for new windows 10 install first. Then boot the computer from usb and install the second windows 10 os instance

    Even though you're planning to delete the old install later, make sure all her important files are backed up somewhere safe (external drive, cloud). Since System Restore is broken, a full backup is even more critical.
