Canary Channel missing from Update ring for Windows 10 and later
When I look at my policy under Update ring for Windows 10 and later in Intune. It does not have the Canary channel available. All I see is Dev Channel, Beta Channel & Windows Insider Release preview....

Insider for Windows10 - not around for 2 years, since the release of Windows11 - waiting for a response 🙂

Yes, the documentation shows that you are right.
But it doesn't seem possible to add the Canary Feed to the current settings – the Dev Channel is explicitly recommended in this Blog:
