M365 Data Transfer to another user

When an employee leaves, we are often called upon to backup and hold on to their data until their replacement is hired and then transfer the data to the new user.  Is there a way to hang on to OneDrive, Teams Files, SharePoint, and other M365 data without keeping the former employee account disabled, but still licensed?  If we un-license them, the data gets destroyed in 30 days and we don't always have a new user in place by then.
