Track App usage in Windows
A customer looks to reduce app sprawl (not monitoring staff) and so wants to log applications used on Windows (domain-joined only) across the enterprise. What methods would you recommend?

You can consider using Software inventory in Defender Vulnerability Management.
It doesn't show how much time people spend using those apps, but can show the list of apps installed on each workstation.
