You can also opt out of M365 Apps updates in the Autopatch service, meaning you can still leverage it for Windows updates etc. https://endpoint.microsoft.com/#view/Microsoft_Intune_DeviceSettings/DevicesMenu/~/windowsAutopatchReleaseManagement

When set to Allow, Windows Autopatch will manage Microsoft 365 apps automatically. To manage them yourself, select the switch to turn it off. You must be an Intune Administrator to make changes to the setting."
