multiple CCE instances on single Windows 2012 R2 Hyper-V host
Do you know if it is possible to have multiple CCE instances on a single Hyper-V host?

Not in a supported way. We do this behind the scenes for upgrade purposes (more information here: https://blogs.technet.microsoft.com/nexthop/2016/08/31/time-to-upgrade-your-cloud-connector-editions-for-the-last-time/) but it's all managed by the service.
What are you looking to accomplish with this configuration?
Thanks for the reply Jemie. The reason for asking are requests coming from couple of o365 SfBOnline customers for deploying and hosting CCE for them. They are based in counties were o365 PSTN calling is still not available and they want to use us as PSTN provider to their SfBOnline. Problem is that we don't really want to buy tens of dedicated 2xCPU(6 cores) / 64GB servers, install Hyper-V on every one, deal with HW support etc. We rather prefer couple of powerful Hyper-V hosts licensed with Win2012R2 DC edition and host all CCEs there.

Totally understand. Right now multi-tenant CCE is not supported and there's no plan to add this capability in the future. Suggest looking at the appliance form factors from AudioCodes and Sonus that are available, as they may provide sufficient management oiptimization and packaging for it to make sense in this scenario..
