I'm experiencing the exact same issue, except it has occurred immediately after migration. The termsets were migrated using ShareGate.
Note - if I create a new managed metadata column in the affected list, assign the same termset to this new column, then select a term in this new column, this error does not occur.

Hi Paolo_Cristina,
I did not find a direct solution to fix the issue with the existing termsets/terms. My workaround was to delete and recreate the destination site, and make sure the OOB terms were saving correctly in the new site. Then I performed the initial migration again. After that, the selected MMS values saved correctly in the list items.
