SharePoint Document Sets Can't Update Once Used

Correct me if I'm wrong.

Once a Site Content Type > Document Set is used, the documents can no longer be updated.

What if you need to change the template for one of the files?

Can I base a template document on a link to a document that can be updated without having to edit the Document Set?
