Information Protection default labels

I have activated Information Protection for our tenant and have been playing with the settings.  When I send a new email, I have the "Protect" button available.  Selecting the button displays these choices:

Encrypt

Do Not Forward

Confidential - Internal use only (this is the only label I have created)

Confidential \ All Employees

Highly Confidential \ All Employees

The third one on the list is a custom label I created.  The others are showing up by default.  I was trying to locate these default labels.  The only place I see default labels is under "Azure Information Protection - Labels" blade.  I see items there that match the last two labels on this list, but I cannot see anything that matches "Encrypt" or "Do Not Forward".

Where are these first two default labels located?  I also see other labels under "Azure Information Protection - Labels" that are not showing up on this list.
