It's true that Exchange Server SE does not support the Windows Server 2025 FFL, but even if it did, it would not provide any specific benefits for Exchange. AFAIK, CU1 will not introduce support for Windows Server 2025 FFL.
Your Domain Functional Level (DFL) can be Windows Server 2025, though.
Out of curiosity, do you have other applications that require a higher FFL? Or is there some other reason that Windows Server 2025 FFL interests you?
