If disabling the new PDF viewer is no longer an option, there isn't much you can do from the Edge side. A practical workaround is to have affected PDFs open in a desktop PDF reader until Microsoft fixes the rendering issue.
It may be worth opening a support case or submitting feedback through Edge so your case gets attached if it's already being tracked.
