I am trying to change my default search engine on Edge Canary Version 105.0.1341.0. I no longer see the option to select a search engine at Settings -> Privacy, Search & Services -> Address Bar and SearchHas this option been disabled or moved elsewhere ?

I've noticed this too, go to edge://settings/search for now.

This is also happening for me on the Dev channel

This has already been fixed in Canary, so the next Dev update should also get the fix!

Unable to change Search Engine in Version 105.0.1341.0
