The new Edge(release) is displaying only in Chinese
Well, I thought it was the VPN, but it's not. I shut off the VPN and now my start page is in English. But, when I open a new page, it's in Chinese. JimRome
warchem, I tested with VPN and turned off preloading new tab page while having the cookies cleared, the page changed its language. It is probably your case. If you are not intended to block cookies, turn off the clear cookies (or block all cookies) function and try again.
GaryRM, if you are mentioning the new tab page, it is saving your preferences (including region/language) in cookies. Blocking or clearing them will clear your preferences and the page will detect your location by your IP.
You may review your settings at Settings > Cookies and site permissions > Cookies and data stored > Manage and delete cookies and site data or enter URL edge://settings/content/cookies
Edge cookies and site data settings
You can check your current IP and the detected geolocation by using online services like https://myip.ms/
EDIT:
Testing further, I found the cookie managing the region/language:
When clearing this value ("ntps") the new start page resets the region to the detected one. If you are blocking/clearing cookies you should add an exception for msn.com.

- warchemMar 17, 2022Copper ContributorI'm running without VPN. I never had the block cookies function on. I turned off preloading. My region says I am in the US. I keep getting the MSN.CN site loading when I load a new tab. That page then asks me what cookies I want to activate in Chinese (Google Translate). I tried deleting the ntps on the msn.com cookies and also deleting all the cookies on msn.cn. New tabs are still opening in chinese.

I never get such a prompt. Do you always get this when opening the new tab page? Can you share a screenshot showing the page with the prompt?
I think you should also check if your Edge has any addons installed, either by yourself or not.
