So, Microsoft's "solution" to using the Outlook PWA with multiple accounts (for example) is to conform all of them to a single start menu shortcut, and then give you a profile switcher dropdown icon in the top of the window. This profile switcher dropdown ONLY appears when you create a PWA multiple times from Edge windows with separate accounts.
I guess this works, but I still wanted multiple start menu shortcuts...
