optional suggestion: new menu bar app for mac
i don't see such options, but at the end my desktop or dock are already full of alias or application or folder or other things.
Alias for profile is ok if you own 2-5 edge profiles (so it wouldn't take a lot of space on the desktop too). is like using alias for websites, is not a good solution if you visit a lot of websites.
We talked about Alias in the other post and what they are for.
you can create different profiles on Edge but don't need to connect them to online accounts and sync passwords, favorites etc.
Outlook aliases are to protect your identify from 3rd party sites by keeping you anonymous, right? if you could sync data and start adding personal information to it, it wouldn't be anonymous anymore, it would be just like your main Microsoft account. so this is the mentality behind Outlook aliases.
for shady websites that you don't trust, you can always use temporary Emails from sites like this:

Also, another example. Firefox has a feature called container. it works just like Edge profiles (as long as they are offline profiles). you can't connect Firefox containers to an online profile and they don't support sync. that is to protect your identity.

HotCakeX you can create shortcuts to different profiles and pin them to desktop = alias (which is not related to alias for outlook, but more like alias for finder)

i thought that what you wrote before looks more like

or https://macmost.com/using-mac-aliases.html with an alias to launch directly the profile related file stored in /library/applicationsupport/edge... (so edge would simply create a type of file, which works like an alias for finder, so that we can launch the profile directly from the desktop).
PS: about launching profile from the dock i already wrote before, which seems to be similar to what you said about taskbar (or at least i think). in such way you are limited to launch only the edge related profiles (= you cannot launch edge canary profile using beta) and edge.app should be open.
