New Microsoft Edge
Since the official release of the Edge Chromunim will be January 15, 2020, will the beta versions be closed? Does it matter what version of Windows I have to get the new Edge? Does this also means that the current Edge on Windows computer will be replaced with the new update?

Beta/Dev/Canary channels are not going anywhere, they will stay and will be used by Microsoft to continue the development of the Edge browser. just like Google uses Beta/Dev/Canary channels to develop their Chrome browser.
Also about how you get the stable version of Edge on Windows:
Microsoft will be pushing out the new Edge via Windows Update to the majority of Windows 10 users
