New Edge Chromium removes persistent tab previews and I wish to downgrade now

yes Tab previews aren't available in any of Edge channels yet, including the experimental ones (beta/dev/canary) but it is still on the top feedbacks list 🙂

also as suggested above you can uninstall the stable Edge the same way you uninstall any program/app on your computer.
There is also another way, you can run both Legacy and new Edge side by side, together.
