As per https://docs.microsoft.com/en-us/deployedge/microsoft-edge-supported-operating-systems Edge Chromium is supported on Windows Server 2016(SAC) with the same mention as for Windows 10 (SAC):

Microsoft Edge being supported in this state should be considered a temporary bridge to getting to a supported OS state.
Note: Some Edge Chromium functionalities might become dependent on Windows Server Update Level. As you are on 2016(SAC) those updates will not reach you. This is why our recommendation remains to update the OS level in order to keep your system secured and working as expected.
