Dev channel update to 81.0.381.0 is live

Couple of suggestions:
1. Is it possible to add support for navigation bar shortcuts (Ctrl+L, Alt+D) to full screen mode? See original Edge as an UI example
2. TIL that reading view still exist but it requires extra effort since it is visible only in "Read aloud" mode. It would be nice to have it as icon in address bar (and or shortcut).

Ssh78 it does, but that functionality may still be hidden behind a flag for you. If you enable the edge://flags/#edge-reading-view flag, you should see an icon on the right side of the address bar to enter Reading View (now called Immersive Reader) when visiting eligible pages, just like in Edge Legacy:
