if people open a forum thread asking for something doesn't mean so many people or even majority of people want it to happen.
people only post here when there is a problem, not to praise something that is already working fine.
so even if you see 50 people asking for a feature, there might be 100 times more people that like the current design and don't want it to change but you don't see them because there is no reason for them to post here one by one praising the gray folder colors.
in this topic alone, there are many people who DISLIKE the yellow folders.
yellow folders = google chrome copy
Edge classic's yellow folders are irrelevant here, it has a totally different UI, not even comparable to the new Edge. (Transparent UI, Pitch black background, clear texts and more)

Consistancy in the Microsoft plattform is both relevant and important.
And that standard is and has been different tones of yellow for at least 20 years.
When Chrome was released in 2008 - Microsoft had yellow folders for about 10 years already so it's Chrome that is a IE copy in that matter.

so Microsoft can give us a few colors to choose from. it's okay if the default stays yellow but at least we will be able to change them
