Dev channel update to 80.0.320.3 is live
I recently updated to v80 and the RAM usage went through the roof to the point it eats up everything available .. brings my machine to it's knees .. I was really liking the progress, now I can't use it .. whats up?

Hmm how much RAM do you have?
I'm running x64 bit OS Windows 10 pro 1909 (fully patched) and Edge insider Canary V80 also x64 and my laptop is old with 4GB RAM DDR3, it's running fine. no memory leak or things like that you describe. the only bottleneck for me is the hard disk which is normal because that laptop is +10 years old but i never had any RAM issues with Edge insider on that laptop.
which OS and version are you using?

Win 10 Pro v1909 w/8GB RAM ... from the time I launch Edge Dev v80, with only the default tab open and not opening any other tabs or doing any searches ... RAM consumption starts at approx 2GB and "idles" at that level for a couple mins and then takes off and rapidly heads north above 4GB

That doesn't look good at all. starts with 2GB when you have only 8GB, wow..
for me when I check it starts with 300MB, I have 16GB in total.

I'm having a couple of issues on Canary 80.0.331.0:
1) frequent freezes, which have happened for a while on Dev channel. Most of the times it fixes by itself, but on a few occasions, the only solution is restarting the browser. It happens even with few tabs open and on a machine with 8GB of RAM, so it's not like when it crashes because there's no system memory available.
2) I'm getting logged out of Disqus whenever the page is refreshed or a new tab is opened. This was not happening with latest Dev build.
3) I set the browser to show only bookmarks icons on bookmark bar, however, it seems to forget my preference and after a while the bookmark titles are expanded. This wasn't happening on Dev channel either.

number 3 happens to all channels, it's due to the fault in sync engines. to prevent that you have to disable favorites sync.
