Will a Bluetooth device work on a WVD?

No and Yes! Bluetooth has a range of 400 meters and you probably has a longer distance to your nearest Azure Datacenter! 🙂 But yes, most of your audio and video equipment will work regardless if connected to BT or USB. But not all of them. You need to do som trial (and perhaps error)!
